pHresh Up-Beet Hummus

Try this easy, delectably creamy beet hummus recipe! Made with healthy ingredients like pHresh superblends, cooked beets, chickpeas, and tahini, this hummus is pure pink lusciousness!

Ingredients:

  • 1 cup chickpeas (cooked)
  • 1/2 cup pHresh superblends
  • 1/3 cup freshly squeezed lemon juice
  • 1 cup beets (cooked and cubed) - approx. 2 medium beets (optional)
  • 2 tbsp tahini
  • 2 tsp lemon zest
  • 1/2 tsp ground cumin
  • 1/4 tsp sea salt
  • 1 clove garlic
  • fresh parsley (for garnish)

*When using ingredients, always use organic when possible.

Instructions:

  1. Add all ingredients into a food processor.
  2. Process until very smooth.
  3. Top with fresh parsley

Reminders:

To cook the beets, place the beets in a small saucepan, and cover with water. Cover and bring water to boil over high heat. Simmer, covered, for 10-12 minutes, until the beets are tender. Drain and let cool. Then, peel using a vegetable peeler or a paring knife.
