pHresh Chocolate Ganache Cake

It's easy to cook, just add all ingredients and bake away! And the best part is it is pretty healthy. Just restrain yourself from eating most of the cake when it comes out of the oven! Here’s what you need:


  • 1 cup almond meal
  • 1 cup cane sugar
  • 1/3 cup boiling water
  • 1/3 cup pHresh Certified Organic Cacao Powder
  • 150 g vegan butter
  • 100 g raw dark chocolate
  • 4 eggs-worth of your preferred egg-replacement ingredient (you may use Aquafaba for egg white replacer)

For Ganache:

  • 100 g raw dark chocolate
  • 1 cup coconut cream (full-fat to keep it vegan-friendly and dairy-free)


  1. Preheat the oven to 170 degrees celsius. Line a 22cm cake pan with baking paper.
  2. Mix pHresh Certified Organic Cacao Powder and hot water in a large mixing bowl until smooth.
  3. In a double boiler, melt the chocolate and vegan butter together. Remove from heat.
  4. In a large mixing bowl, combine the melted chocolate with the cane sugar, almond meal, and 1 part of the liquified egg-replacing ingredient. Stir until well combined.
  5. Using an electric mixer, beat the liquified egg-white replacer until soft peaks form. Fold this into the chocolate mix carefully until just mixed through.
  6. Transfer the batter into the prepared pan and bake for 1 hour. Allow the cake to cool in the tin for 15 minutes before turning it out onto a wire rack to cool.
  7. To make the ganache, combine the raw chocolate and coconut cream in a small saucepan on low heat, stirring until smooth.
  8. To serve, drizzle the cake with chocolate ganache and add shredded coconut or raspberries.

Bake Time: 60 minutes
