Healthy Chocolate Banana Muffins

Planning to spend quality time with your kids on holiday? Why not try this yummy and nutritious recipe with your little ones? They will surely love it! Here are the ingredients and steps you can enjoy with them!

Ingredients:

  • 3 medium bananas
  • 1 1/4 cup old fashioned oats
  • 1 cup unsweetened almond milk
  • 3/4 cup oat flour
  • 1/3 cup quinoa flour
  • 1/3 cup pHresh Certified Organic Cacao Powder
  • 1/4 cup coconut oil
  • 1/2 cup dark chocolate chips (optional)
  • 1 cup grated carrot
  • 1/2 cup cane sugar
  • 2 tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. sea salt
  • 1 egg, lightly beaten

Instructions:

  1. Preheat the oven to 400 degrees.
  2. In a medium bowl, mix the oats and almond milk, set aside.
  3. In a large bowl, whisk together the quinoa flour, oat flour, Cacao Powder, cane sugar, baking powder, baking soda, cinnamon, nutmeg, and sea salt.
  4. Stir in mashed bananas, oatmeal mixture, and egg. Stir in oil, then fold in chocolate chips.
  5. Fill muffin cups 2/3 full and bake for 16-20 minutes.

Prep Time: 10 minutes

Bake Time: 20 minutes
