This is a great hybrid meal - part raw and part cooked. This recipe in particular is mostly raw, but the onion, cumin and turmeric are cooked and are extremely healing and warming for the body. This is a great one to do in winter when you want to eat raw, but also want something cooked to warm your body. These types of hybrid meals are becoming popular for people who are wanting to incorporate a lot more raw into their diet.
Total time: 20 minutes Serves: 1-2 Ingredients: 1 tablespoon of extra virgin coconut oil 1 large yellow onion, diced 1 teaspoon of cumin 1/2 teaspoon of turmeric 1 avocado, chopped into cubes 1 cucumber, chopped into cubes 1 cup of raw greens, spinach, lettuce, parsley, cilantro, kale etc pHresh salt and pepper to taste
Action: 1. Heat coconut oil on medium heat in a frying pan. Add the onion and stir fry for 2 minutes until tender. Add the cumin and turmeric and stir fry or another 2 minutes. 2. In a bowl, mix the onion fry up, cucumber, avocado and greens! Enjoy! Add salt and pepper to taste, and maybe even a squeeze of a lemon.
