Cranberry Superblend Bread

Ingredients:
- 2 cups whole wheat pastry flour
- 1 cup uncooked rolled oats
- 1 cup dried cranberries
- 1 cup unsweetened almond milk
- 1/2 cup orange juice
- 2 tbsp pHresh Superblends
- 1 tbsp coconut oil, melted, plus more for greasing the loaf pan
- 1 tbsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 2 tsp. orange zest
- 1 egg
Instructions:
- Preheat the oven to 375°F and grease a loaf pan with coconut oil or line with parchment paper.
- In a large mixing bowl, combine the whole wheat pastry flour, pHresh Superblends, oats, baking powder, cinnamon, sea salt, and cranberries. Stir to combine.
- In a separate mixing bowl, combine the milk, orange juice, one egg, orange zest, and coconut oil.
- Add the milk mixture into the flour mixture, and stir to combine. The mixture will be thick and lumpy.
- Spread the batter into the prepared loaf pan.
- Bake in the oven for 25-30 minutes, until the sides separate from the pan and the knife in the center comes out clean.
- Cool on a cooling rack. Serve warm or at room temperature. Slice into thick slices and enjoy.
